These sugar cookies are basically Easter magic in dough form—soft, buttery, and loaded with crunchy bits of Cadbury Mini Eggs for the ultimate springtime treat!

Cadbury Mini Egg Roll-Out Sugar Cookie Recipe

Yields 12 cookies


Ingredients:

    •    1 cup salted butter

    •    3/4 cup sugar

    •    1/4 cup brown sugar

    •    1 large egg

    •    1 tsp butter-vanilla extract

    •    3 cups flour

    •    3/4 tsp salt

    •    1/4 tsp baking powder

    •    1 cup Cadbury Mini Eggs


Instructions:

  1. Place the Cadbury Mini Eggs in a ziplock bag and smash into smaller pieces; set aside. Cream the butter and sugars until light and fluffy.

  2. Add the egg and vanilla, mixing until combined.

  3. Gradually mix in the dry ingredients until a dough forms, then fold in the crushed mini egg pieces.

  4. Roll out the dough and refrigerate for 1–2 hours.

  5. Preheat the oven to 375°F.

  6. Cut into desired shapes and bake for 10–12 minutes.


Royal Icing Tip: Add 1–2 teaspoons of vanilla extract to enhance the flavor.

You can order the butter-vanilla extract directly from LorAnn. Amazon eats up small companies' profit margins and returns nothing to its employees, only to its stockholders. It's always better to buy directly from these companies than though Amazon. I'll get off my soap box now. Thanks.
